Alfredo Sauce - (Served with Bowtie Pasta)
 

This quick and easy Alfredo sauce has the same creamy texture and rich flavor as traditional versions.

Makes 8 servings

Prep Time: 5 minutes

Cook Time: 15 minutes

 

Ingredients

 

¼ cup olive oil

3 Tablespoons all-purpose flour

1 clove garlic, minced

2 cups rice milk

4 oz cream cheese

1/3 cup shredded parmesan cheese

¼ teaspoon lemon juice

2 Tablespoons chopped basil

2 Tablespoons shredded parmesan cheese

 

Directions

 

1.      Heat olive oil in a large skillet over medium heat. Add flour and use a whisk to make a paste then add minced garlic.

2.      Slowly add rice milk, whisking constantly to prevent lumps. Let mixture to come to a boil and thicken.

3.      Add cream cheese and whisk to mix well. Remove from heat.

4.       Add 1/3 cup parmesan cheese, nutmeg and lemon juice. Mix well.

5.       Serve over pasta, chicken, steamed vegetables etc.

6.       Garnish with chopped basil and remaining cheese.

You can find ingredients at Trader Joe’s. I use the Trader Joe’s Italian Farfalle authentic Italian pasta (Bowtie Pasta). My favorite is serving this dish over shrimp and mix vegetables from Trader Joe's brand.  (large cooked shrimp    "tail-off" ready to eat - just thaw and rinse), vegetables ( Melange a Trois, red, yellow & green bell pepper strips). I get them all at Trader Joe's.

Once sauce is ready, drain pasta and mix shrimp, peppers and sauce together, cook and additional 5 minutes (only if you enjoy well cook shrimp).
